Last night I made dinner with our visiting friend, Dan. We made a pizza with caramelized onions, spinach, Italian sausage, and goat cheese. When I suggested we put an egg on it, Dan was hesitant.
What?? Eggs are so great! They are awesome on pizzas, burgers, salads, and the list goes on. If you know me well, you know I also have a tumblr dedicated to eggs. It’s a little obsessive I admit but, I’m not alone. I have a bunch of good friends that love nothing more than a runny yolk.
After much deliberation, we decided to go for it. I’m so glad we did! It turned out really yummy and I think the eggs brought the pizza to the next level. I don’t really have a detailed recipe to share since we made things up as we went along.
To summarize, we started by caramelizing half an onion and added some red pepper chili flakes. Next we added the sausage (casing removed) in 1″ pieces and cooked until the meat was mostly brown. Then we tossed in a cup or so of frozen spinach with two cloves of chopped garlic, some salt, and pepper. We placed all of that on a whole wheat dough with some basil tomato sauce and baked it at 425 degrees F for 5 minutes before adding the eggs and goat cheese. We baked that for an additional 7-8 minutes.
The lesson of the day is don’t be afraid to put an egg on it!
