Blueberry Almond Rice Pudding

What to do with left over rice?

Make rice pudding! I had about a cup of rice left over from dinner this week and thought it would be perfect for rice pudding. I didn’t have whole milk but found that using low fat milk worked really well. It came out really creamy, thick and super yummy. I had these fancy honey-cinnamon almonds and dried blueberries that I added but I think any combination of dried fruits and nuts could be substituted. Even a drizzle of honey would make a great topping.

Blueberry Almond Rice Pudding
Makes 2 hearty servings.


  • 1 cup cooked rice 
  • 1 1/2 cup low fat milk
  • 1/4 cup sugar
  • 1 T unsalted butter
  • 1 tsp cinnamon
  • dash of nutmeg
  • pinch of salt
  • chopped almonds 
  • dried blueberries

*In a medium saucepan, combine rice, milk, sugar, butter, spices and salt. Bring to a boil and then simmer on low (stirring constantly) for approximately 20-25 minutes or until desired creaminess is achieved.
*When done, remove from heat and add in chopped almonds and dried blueberries.
